In the context of this opening, we are looking for our future pastry commis on a seasonal fixed-term contract.
Reported to the head chef and the pastry sous-chef, you contribute to the quality of the desserts and pastries served to customers by respectingthe recipes, procedures, and presentation standards of the Saint Roch. Your role is essential to the smooth operation of the pastry department and the satisfaction of the clientele.
Your role
As a pastry commis, you participate in the preparation and realization of the establishment's sweet creations. You carry out the essential preparatory work: weighing, preparation of raw materials, making of pastes, creams, fillings, and decorative elements. You contribute to production by assisting the chefs de partie, carrying out certain simple preparations independently, and participating in the assembly, arrangement, and plating of desserts in strict compliance with recipes, technical sheets, and presentation standards.
You prepare and organize your workstation before each service, ensure the tidying up of raw materials and preparations, and maintain a clean, structured, and fully stocked laboratory. You also participate in the closing operations of the laboratory. Attentive to the quality of the products, you check their freshness, respect storage and conservation procedures, apply rotation rules, and report any anomalies or shortages.
You strictly adhere to HACCP standards, food hygiene rules, and internal procedures. You clean the equipment, ensure the cleanliness of production areas, and use equipment safely. Finally, you work closely with the entire pastry brigade, follow your superiors' instructions, and contribute to the smooth running of the service through your rigor, organization, and team spirit.
