Salary: $37,584 annual paid semi-monthly

Description of essential duties and responsibilities:
  • Prepare all meals and snacks for residents and qualifying staff at CCCJC.
  • Time food production such that all food is ready at the time of service
  • Prepare food items according to established recipes and menus in a manner in which preserves food freshness, quality, and appeal
  • Utilize batch cooking techniques to avoid over or underproduction * Utilize safe food handling techniques at all times
  • Store food items according to established standards of practice; utilize proper labeling and dating
  • Hold prepared food items at appropriate temperatures (below 40° if cold, above 135° if hot)
  • Maintain production records (food usage, overages, shortages, customer counts, etc.)
  • Maintain established logs (food temperatures, cooling temperatures, cooler & freezer temperatures, etc.)
  • Maintain a clean and sanitized work area * Follow established work rules and regulations; ready for work in the kitchen, in uniform, at the scheduled time
  • If work shift requires, properly open and/or close the kitchen - unlocking/locking doors & secured areas, and turning on/turning off of all equipment essential to the operation
  • Maintain a safe, tidy, and well-organized work environment at all times; clean up spills quickly, wear protective gear as needed (i.e.: slicer glove), and store wares safely
  • Communicate needs and concerns regarding food production and kitchen operation to the supervisor appropriately, and in a timely manner; Assist Food Service Supervisor with paperwork
  • Monitor kitchen equipment for proper functioning; report any discrepancies to supervisor immediately
  • Support other kitchen staff in assuring that the essential functions of the kitchen are performed adequately and appropriately
  • Be proactive in communication; monitor communication posting areas closely
  • Assist Food Service Supervisor in ordering and inventory procedures; be able to do this task in the absence of the Food Service Supervisor.
  • Putting away/Pulling stock as needed
  • Counts and logs all utensils at least twice for every meal served, report any discrepancies to supervisor immediately
  • Help supervise the residents during meals when needed.
  • Help train new staff on all the functions in the kitchen.
  • Wear closed-toe shoes, hairnet, or designated Justice Center cap
  • Complete all required trainings annually for the kitchen, county and the facility.
  • Assume any other responsibilities as directed by the food service supervisor.
Requirements

Qualifications for position:
  • Minimum of 1-year of experience in a commercial, educational, or similar kitchen.
  • High School diploma or equivalent. This provision may be waived by Authorized Official of CCCJC.
  • Must pass background screening, drug and alcohol screening
  • Must be 21 years of age

Supervisory relationships: This position reports directly to the Food Service Supervisor

Skills and knowledge required: Must have a knowledge of in the food service area. Must be able to stand on his/her feet for an entire eight-hour shift. Individual must be capable of lifting, pushing and or carrying 45 pounds

Prior experience required: Must have prior experience in food services

Personal qualities: Individuals should have sufficient interpersonal skills to work closely with kitchen staff, other peers and residents.

Amount of travel and other special conditions or requirements: Some local travel may be required

Work Schedule: Required 40-hour work week to include evenings, weekends, and Holidays; must be available to cover shifts on short-notice.
